Chocolate Cake Dessert Recipe
Rock Mellow Chocolate Cake Recipe
 
Cake Ingredients:
Materials Quantity
A unsalted butter 250g
  dark covertures’ chocolate 330g
  chocolate paste 20g
 

espresso paste

10g
  3 in-1 coffee powder 1 packet
B eggs 5
  sugar 230g
 

vanilla essence

10g
C (SIFTED)  
  all-purpose flour 200g
 

cocoa powder

30g
  baking powder 8g
D sour cream 100g
Method:
Step 1:
Melt 'A' till well-combined on double boiler. Whip 'B' on high speed till thick and fluffy.
Step 2:
Mix slowly 'A' and 'B' batter, followed by 'C'. Lastly fold in 'D' slowly.
Step 3:
Pour the mixture into two 9” round baking tins lined with baking paper. Bake at 170c for about 30 minutes or just firm to touch.
Step 4:
Leave to cool on wire rack before removing from tins. Spread filling in the middle and decorate as desired.

Rocky Mellow Filling:

Materials Quantity
A sugar 50g
  water 100g
B egg whites 5
C white chocolate 200g
  dark covertures’ chocolate 300g
D whipping cream 250g
E gelatin powder dissolves 10g with 30g hot water
Method:
Step 1:
Boil 'A' for about 3 to 5 minutes till a soft ball is formed.
Step 2:
Whip 'B' till soft peak and slowly add 'A' to combine. Continue whipping till fluffy.
Step 3:
Melt 'C' and fold it into the above mixture.
Step 4:
Whip 'D' till stiff and fold lightly to the above mixture. Add in 'E' and mix till thoroughly combined.
Assembly:
Step 1:
Place one layer of the cake into the bottom of a 10” cake tin.
Step 2:
Pour in 2/3 of the Rocky Mellow Filling, spread evenly and place some marshmallows on it.
Step 3:
Place another layer of cake on it and pour the remaining filling on top. Level it. Drop some marshmallows on top and let the cake set in the freezer for 1 hour. Remove and decorate as desired.
