Peaches Crystal Cake Recipe
Ingredients:

A egg white 4 units
  castor sugar 120 g
B egg yolk 4 units
C flour 120 g
  baking powder ¼ teaspoon
D vanilla essence 1/8 teaspoon
  melted butter 80 g
  Filling  
  agar-agar powder 3 teaspoons
  water 200 ml
  evaporated milk 40 ml
  fresh milk 20 ml
  egg white 3 units
  castor sugar 80 g
  condensed milk 2 teaspoons
  Agar-agar Solution  
  agar-agar powder 2 teaspoons
  castor sugar 80 g
  water 500 ml

 
Method:
Step 1:
Whisk 'A' till fluffy, add in 'B', beat again, mixture in sifted flour 'C' and 'D', pour into 8" tray greased with butter and baked with 180 Celsius for 20 minutes.
Step 2:
Bring water to boil over low heat till agar-agar dissolved, add in ideal milk and fresh cream, condensed milk.
Step 3:
Whisk egg white with castor sugar till stiff. Immediately blend in (Step 2) solution to stir until well-mixed.
Step 4:
Slice the cake into 2 layers, put one layer into a (8x8x3)" tray, pour in filling with slices peaches, put another layer cake and pour in filling, pipe out fresh cream arrange peaches and kiwi. Pour agar-agar solution on top. Leave to set in fridge.
